Ingredients:
- 200 g Dates
- 1 ½ cups Milk
- ½ cup Desi Ghee (or refined oil/extra light olive oil)
- 1 cup Wheat Flour (Atta)
- 1 teaspoon Baking Soda
- ½ teaspoon Baking Powder
- ¼ teaspoon Salt
- 1 ½ tablespoon Cacao Nibs
- Chopped Walnuts (for garnish)
METHOD:
1. Soak and Blend Dates:
- Soak 200 g of
dates in 1 ½ cups of hot milk for about an hour. This softens the dates and
makes them easier to blend.
- Once the dates
are soft, blend them into a smooth mixture.
2. Prepare the Wet Mixture:
- Add ½ cup of desi
ghee (or your preferred oil) to the date mixture.
- Mix thoroughly
until the ghee or oil is well incorporated with the date puree.
3. Sift and Combine Dry Ingredients:
- In a separate
bowl, sift together 1 cup of wheat flour, 1 teaspoon of baking soda, ½ teaspoon
of baking powder, and ¼ teaspoon of salt.
- Gradually add the
dry ingredients to the wet date mixture, mixing continuously to avoid lumps.
4. Prepare the Cake Batter:
- Once the batter
is smooth and lump-free, fold in 1 ½ tablespoons of cacao nibs.
- Mix the batter
well to ensure the cacao nibs are evenly distributed.
5. Pour and Garnish:
- Grease a cake
mold with ghee or oil.
- Pour the batter
into the greased mold.
- Garnish the top
with chopped walnuts for added crunch and flavor.
6. Bake the Cake:
- Preheat your oven
to 180°C (350°F).
- Place the cake
mold in the preheated oven and bake for 50 minutes.
- To check if the
cake is done, insert a toothpick or skewer into the center. If it comes out
clean, the cake is ready.
7. Cool and Serve:
- Once baked,
remove the cake from the oven and allow it to cool in the mold for a few
minutes.
- After it cools
down, transfer the cake to a wire rack to cool completely before slicing.
