Gondh (edible gum) and dry dates (also known as "chuhara" in Hindi) are both known for their health benefits. They are trendy in traditional Indian recipes for their nutritional value and energy-boosting properties. Here's a recipe for a healthy and tasty Gondh and Dry Dates Ladoo, which is especially beneficial for energy and strength.

 

 Ingredients:

  1. - 1 cup gondh (edible gum)
  2. - 1 cup  dry dates (chuhara), pitted and finely chopped
  3. - 1 cup whole wheat flour
  4. - 1/2 cup ghee (clarified butter)
  5. - 1/2 cup jaggery, grated (or as per taste)
  6. - 1/2 cup almonds, chopped
  7. - 1/2 cup cashews, chopped
  8. - 1/4 cup desiccated coconut (optional)
  9. - 1 teaspoon cardamom powder


Instructions:


1. Prepare the Gondh:

   - Heat 1/4 cup of ghee in a deep pan.
   - Fry the gondh in batches until they puff up and become golden brown. Be careful, as gondh tends to splutter. Remove the fried gondh and let it cool. Once cooled, crush them into smaller pieces using a mortar and pestle or a rolling pin.

2. Prepare the Dry Dates:

   - Finely chop the pitted dry dates. Alternatively, you can blend them in a food processor for a finer texture.

3. Roast the Wheat Flour:

   - In the same pan, add the remaining ghee and roast the whole wheat flour on low flame until it turns golden brown and emits a nutty aroma. This process takes about 10-15 minutes. Keep stirring continuously to prevent burning.

4. Combine Ingredients:

   - Once the flour is roasted, add the crushed gondh, chopped dry dates, chopped almonds, chopped cashews, and desiccated coconut. Mix well.

5. Add Jaggery:

   - Add the grated jaggery to the mixture. The heat from the roasted flour will melt the jaggery, making it easier to mix. Stir until the jaggery is well incorporated.

6. Flavor with Cardamom:

   - Add the cardamom powder and mix thoroughly.

7. Shape the Ladoos:

   - While the mixture is still warm, take small portions and shape them into round ladoos. If the mixture is too dry and hard to shape, you can add a little warm ghee to bind it.

8. Cool and Store:

   - Let the ladoos cool completely. Once cooled, store them in an airtight container. They can be kept at room temperature for about 2 weeks.
