Ingredients:
- 1/2 cup Pumpkin Seeds (mildly roasted)
- 1/2 cup Sunflower Seeds (mildly roasted)
- 10-12 soft seedless Dates
- 1/2 cup grated Dry Coconut
- 1 tsp Vanilla Essence (optional)
- 200 gm Dark Chocolate
Method:
1. Prepare the Date-Coconut Mixture:
- In a food
processor or chopper, add 10-12 soft, seedless dates.
- Add 1/2 cup
grated dry coconut to the chopper.
- Coarsely grind
this mixture until it reaches a sticky texture. Set it aside.
2. Roast the Seeds:
- Mildly roast 1/2
cup of pumpkin seeds and 1/2 cup of sunflower seeds in a dry pan over low heat.
This enhances their flavor and crunch.
3. Combine the Ingredients:
- Add the roasted
seeds to the date-coconut mixture in the chopper.
- If using, add 1
tsp of vanilla essence to the mixture.
- Grind again to
achieve a sticky and slightly sandy texture. This mixture will form the base of
your bars.
4. Shape the Bars:
- Line a flat tray
with parchment paper and grease it lightly.
- Transfer the
mixture to the tray and flatten it evenly using the back of a spoon or your
hands.
5. Add the Chocolate Layer:
- Melt 200 gm of
dark chocolate in a microwave or over a double boiler.
- Pour the melted
chocolate over the flattened seed mixture in the tray, spreading it evenly.
6. Set and Cut:
- Optionally,
sprinkle some extra seeds on top of the chocolate layer for added crunch and
presentation.
- Refrigerate the
tray for at least 30 minutes, or until the chocolate is fully set.
- Once set, remove
the tray from the fridge and cut the mixture into bars.
7. Enjoy:
- Your healthy,
delicious, and nutrient-packed dates and seeds bars are ready to enjoy! Store
them in the fridge and reach for one whenever you get a sweet craving.
